"Pompoencurry voor drie" by Lieke

Ms Aitch and Mr El bought some art. A kitchen friend. And postcards. From Liekeland. Lieke is illustrator and she can apply magical scenes to the paper. Lieke attached a recipe to the package which Ms Aitch and Mr El finally cook by themselves: Pompoencurry voor drie.
Ingredients
1 pumpkin (Hokkaido, Muscat pumpkin, or the like)
2 chopped onions
4 cloves of chopped garlic
chopped fresh ginger (piece about 3cm)
1 cored and chopped red chili
1/2 tsp paprika powder
1 tsp turmeric
1 tsp coriander powder
2 tsp cumin powder
25g coconut oil
400ml coconut milk
200ml vegetable stock
300g spelt
Instructions
If necessary peel the pumpkin, remove the seeds and cut into large pieces. Heat up the coconut oil in a pan and sear onions, garlic, ginger and chili. Add spices and pumpkin and sear for 2 minutes. Fill up with coconut milk and stock and simmer at low heat for about 15 minutes. Meanwhile boil the spelt with an pinch of salt for about 30 minutes until cooked. Season the curry with salt and pepper.
