Potato salad

This year Ms Aitch is going to plant potatoes, because Mr El loves to eat potato salad. With fish, Maultaschen (Swabian pasta filled with meat and spinach), schnitzel or meat balls. It’s important to use good potatoes and to dress the salad with hot stock.
Ingredients
for 4 persons:
1,3kg waxy potatoes
250ml vegetable stock
2 tbsp mustard
5 tbsp vinegar
salt and pepper
5 tbsp oil
2 tbsp chives (chopped)
Instructions
Cook the potatoes, let them cool down a little bit and peel them. Cut the potatoes in thin slices and put into a salad bowl. Boil up the vegetable stock, add vinegar and mustard and pour over the potatoes. Season with salt and pepper and finally add the oil. Sprinkle with chopped chives.
