Fluffy sour milk biscuits

Fluffy is like "How cute, sweet, cuddly, dinky,...". Your eyes are opened wide full of enthusiasm and tears of joy also aren't bad!
Ms Aitch and Mr El never use this words. But they call them tenderly "fluffies" and if you look closely you can see their eyes shining when the biscuits come out of the oven.
Ingredients
300g spelt flour
20g fresh yeast
1 tsp salt
50g cold butter (cut into dice)
250ml sour milk
2 tbsp olive oil for brushing the baking tray
Instructions
Mix flour, salt and butter in a bowl. Crumble yeast, dissolve in lukewarm water and add it to the flour mix. Warm up the sour milk until lukewarm and pour into the bowl.
Knead the dough until smooth. If necessary add a little bit of flour. Leave the dough on a warm place for 30 minutes.
Preheat the oven to 200°C (top-/bottom heat).
Roll the dough out to about an inch thick on a floured surface. Use a biscuit cutter or a glass to cut the biscuits. Put them touching one another on a backing tray brushed with olive oil.
Bake for 15-20 minutes until golden brown.

Ist sauermilch gleich buttermilch,odr gleich dickmilch? Freue mich über antwort. Ria

Liebe Ria,
Sauermilch ist Buttermilch gemischt mit Magermilch. Die Brötchen funktionieren aber genauso gut mit Buttermilch und bestimmt auch mit Dickmilch.
