Couscous - YOK blend of spices
- 06. May 2015
When the whole house smells of spices her heart is full of joy. Ms Aitch roasts seeds and grounds into powder. Here a pinch there a tablespoon. Blessed she mixes the blend of spices and thinks about new recipes for couscous salads.
Ms Aitch and Mr El use the blend of spices for their variation of couscous like this one with red cabbage or that one with cauliflower. It may be used for purposes other then intended.
Ingredients
For about 35g:
finely grated zest of 1 lime
2 tbsp cumin seeds
3 tbsp coriander seeds
1/2 tsp caraway seeds
1 tsp varied peppercorns
1 tsp pink pepper berries
1/2 tsp chili flakes
1 tbsp sweet paprika powder
Instructions
Put the fresh grated lime zest on a plate and place on a sunny site for about 2-3 hours until it's dry. If there isn't a sunny place, you have to put it in the oven or on a radiator.
Roast cumin seeds, coriander corns and caraway seeds in a pan without any fat. Put in a mortar and ground into powder. Add peppercorns and pepper berries and ground until finely powder.
Mix it with chili flakes, paprika powder and lime zest and put into a glas. Store it dry.
